Triple Berry bars



These high fibre bars are made with delicious @panierdufermier produce. For a gluten-free version, please use certified oats and all-purpose GF flour.




Filling


1 1/2 cups fresh chopped & pitted cherries

1 1/2 cups fresh blueberries

1 1/2 cups fresh blackberries

1 1/2 cups chopped dates

1/4 cup water

1/2 lemon (juice)

Crust


1 cup unbleached flour

1/2 cup oat flour

3/4 cup instant oats

3/4 cup rolled oats

3/4 cup brown sugar

1/2 cup melted butter

1/4 cup baking soda

1/4 cup salt

Crumb


1/4 cup brown sugar

1/4 cup rolled oats

1/4 cup instant oats

1/4 cup oat flour

Method


Combine berries, dates, water and lemon juice in a saucepan. Cover and simmer for 20 minutes until it becomes a thick purée. Meanwhile, preheat the oven at 350 F. In a large bowl, add all the dry ingredients of the crust and mix in the butter. Add 2/3 of the mixture to the pyrex and pat it down. Bake for 12 minutes. Meanwhile, add the crumb ingredients to the remaining crust mixture. Pour the filling on the crust and top off with the crumb mixture. Bake for 25 minutes and let cool before serving. Enjoy!
