Spinach & strawberry salad



Quebec strawberries & locally grown pesticide-free spinach from @panierdufermier are paired in flavourful summer salad.



Ingredients (For 2 portions)

2 cups fresh spinach

1 cup sliced strawberries

1 avocado (cut in cubes)

1/2 sliced red onion (soaked in ice water)

60g plain goat cheese

1/4 cup sliced almonds

1/4 cup fresh mint (chopped)

Balsamic paste (drizzle)

Avocado oil (drizzle, optional)

Ground pepper & salt (to taste)

Method

Toast the sliced almonds in a pan at low heat for about 5 minutes, until golden and let cool. Mix all the ingredients in a large bowl. Enjoy!
