Quick ratatouille

Makes 6 portions.


Ingredients

3 peppers

3 fresh tomatoes

1 eggplant

1 onion

1 teaspoon dried oregano

Ground pepper and salt to taste


Method

Cut all the vegetables.

Start browning the onions for a few minutes.

Add the rest of the vegetables and spices.

Simmer for 20 minutes. Enjoy!
