This Mediterranean inspired recipe is loaded with antioxidants and flavour.
Ingredients
Rainbow carrots
Turmeric
Garlic powder
Fresh parsley
Extra-virgin olive oil
Salt and pepper
Method
Wash carrots and pat dry. Drizzle with olive oil.
Season the carrots with all the spices.
Cook in the oven at 375 F for 25 minutes.
Slice them in half, add more turmeric, pepper and olive oil.
Sprinkle with fresh parsley and serve 😋
