Pasta salad with chicken & romanesco broccoli



This salad is made with yummy @panierdufermier produce, roasted chicken breast, spelt pasta and feta cheese.



Ingredients (Makes 4 portions)


3 cups cooked rotini pasta

4 chicken breasts (roasted and sliced)

1 romanesco broccoli (cut into florets and steamed)

2 celery stalks (cut thinly)

1 leek (cut thinly)

1 cup microgreens

200g crumbled feta cheese

1/2 cup roasted and slivered almonds

Juice of 2 lemons

Extra-virgin olive oil (drizzle)

Freshly ground pepper



Method


Mix all the ingredients in a large bowl. Garnish with microgreens and enjoy!
