Overnight oats with rhubarb & strawberry compote šŸ“


These overnight oats are made with delicious produce from @panierdufermier. The recipe contains rhubarb, strawberries and pecans which are great sources of antioxidants šŸ’š


Ingredients

Makes 2 portions.

1 cup uncooked instant, steel-cut and rolled oats (1/3 cup each)

1/2 cup rhubarb & strawberry compote*

1 cup unsweetened vanilla almond milk

4 tablespoons chopped pecans

2 heaping tablespoons plain Greek yogurt

Manuka honey if desired (drizzle)

Add 1/2 cup of the oats mixture in each mason jar. Add the rest of the ingredients, mix well and refrigerate for a few hours. Enjoy!

*Rhubarb & strawberry compote

1lb (454g) strawberries (hulled & chopped)

3 stalks rhubarb (chopped)

1/4 cup raw cane sugar

1 lemon (juice)



In a saucepan, bring all the ingredients to a boil. Reduce the heat, mix frequently while simmering uncovered for 20 minutes. Let cool and refrigerate for a few hours before serving. Enjoy!
