Mexican bowl

Festive and filling, this bowl will keep you satisfied with its balanced macronutrients. The pumpkins seeds add a nice crunch. You can also add tortilla chips crumbs if you wish.


Ingredients

Yields 2 portions.


1 romaine heart, torn

1 cup ground beef taco meat*

1/2 cup corn kernels

1/2 cup black beans

1/2 cup shredded cheddar cheese

1 tomato, diced

1 avocado, diced

4 tbsp pumpkin seeds

4 green onions, chopped

2 limes, juiced

4 tbsp sour cream

4 tbsp fresh cilantro, chopped

Ground pepper and salt to taste


Method

Make beds of romaine in 2 large bowls.

Add all the ingredients and top off with sour cream. Mix well right before eating. Enjoy!


*Taco meat

Ingredients

Yields 2 portions.


1/2 lbs (225g) lean ground beef

1/2 onion, chopped

1 tbsp avocado oil

2 tsp chili powder

1 tsp dried oregano

1 tsp ground cumin

1 tsp garlic powder

Ground pepper and salt to taste

Tabasco to taste


Method


At medium heat, brown the chopped onions with avocado oil. When they become soft, add the spices and mix well. Add the meat and brown for about 10 minutes, until no more pink is visible. Add Tabasco, pepper and salt to taste. Enjoy!
