This flavorful lentil soup has turmeric, sweet corn and lemon juice.
Ingredients
Yields 6 portions.
8 cups vegetable broth
2 cups dried red lentils
1 cup corn kernels
3 carrots, chopped
1 onion, chopped
1 lemon, juiced
4 garlic cloves, chopped
1 bay leaf
1 tablespoon turmeric
Salt and pepper to taste
Slices of lemon for garnish
Method
Sautée the chopped onions and carrots with a bit of evoo at medium heat. After 5 minutes, add the chopped garlic, turmeric and pepper. Sautee for another 5 minutes.
Add the corn, lentils, bay leaf and vegetable broth. Bring to a boil and lower the temperature to low. Let simmer for 20 minutes.
After cooking, remove the bay leaf. Add the lemon juice and salt to taste. Use a hand mixer to purée the soup to desired consistency. Garnish with lemon slices. Enjoy!
