Grilled tofu is so delicious and versatile. In this recipe, it’s paired with a cold soba noodle salad with edamame and veggies. The tofu marinade is used as a dressing before serving.
Ingredients (2 portions)
Marinade & tofu
1/4 cup tamari sauce
2 tbsp grated ginger
2 tbsp mirin
2 tbsp maple syrup
1/2 lime (juiced)
2 tbsp avocado oil
450g extra-firm plain tofu
Salad
Soba noodles (2 small individual packets)
1 cucumber (sliced)
1 avocado (sliced)
1 cup edamame
1/2 lime (sliced)
1 bunch cilantro (chopped, garnish)
2 tablespoons roasted sesame seeds (garnish)
1 bunch green onions (chopped finely, garnish)
Method
Slice the tofu and drain the excess water with paper towels. Mix all the ingredients of the marinade and add to the tofu. Keep in the refrigerator for at least 3 hours.
Cook the noodles according to the instructions. Rince under cool water and keep aside. Oil the BBQ grill and preheat for a few minutes. Grill the tofu at medium heat for 3 minutes on each side. Meanwhile, add the noodles, edamame and veggies to a serving dish. Add the grilled tofu and garnish with limes, cilantro and sesame seeds. Serve with the marinade and enjoy!
