Festive salad with candied pecans

This yummy salad is made with fresh @panierdufermier produce. This recipe is rich in antioxidants and prebiotic fibre.


Ingredients

Makes 4 portions.

3 cups arugula

2 avocados (sliced)

1 cup microgreens

1 leek (thinly sliced)

1 pomegranate (arils)

1 cup pecan halves

1/4 cup maple syrup

Parmigiano-Reggiano shavings (to taste)

1 teaspoon ground cinnamon

1 pinch cayenne pepper

1 lemon (juice)

Extras-virgin olive oil (drizzle)

Ground pepper & salt (to taste)


Method

In a pan, mix the pecans with maple syrup and spices. Bring to a gentle boil and let simmer, stirring frequently until the pecans become crystallized (about 20 minutes). Remove from heat and let cool.

Mix the rest of the ingredients in a large bowl and serve. Top with candied pecans. Enjoy!
