These yummy and fulfilling muffins are made with fresh and seasonal produce from @panierdufermier
Ingredients (makes 12 muffins)
1 medium apple (peeled and chopped)
1 cup fresh cranberries
1 1/4 cup milk (plain, any type)
1 cup unbleached flour
3/4 cup old fashioned oats
3/4 cup oat flour
1 orange (zest and juice)
2 eggs
1/2 cup chopped pecans
1/2 cup brown sugar
2 tablespoons grated ginger
2 tablespoons avocado oil
1 teaspoon vanilla extract
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon cinnamon
1/4 teaspoon salt
Topping
2 tablespoons brown sugar
1/4 cup old fashioned oats
1/4 cup chopped pecans
1/4 cup softened butter
Method
Preheat the oven to 400F.
Mix all the topping ingredients and set aside.
In a large bowl, sift and mix all the dry ingredients. Mix all the wet ingredients in a small bowl. Add all the ingredients together without over-mixing. Pour the batter in silicon cups or a greased muffin pan. Add the topping mixture. Bake for 15 to 20 minutes. Let cool and enjoy!
