These wild rice and flax gluten-free pancakes from @floatingleaffoods are so delicious and easy to make. Top them with homemade coconut cream, strawberries, fresh mint and maple syrup for a divine breakfast šŸ¤

Ingredients (makes 2 portions)

ā €ā €ā €ā €ā €ā €ā €ā €ā €

1 1/4 cups pancake, waffle & muffin mix

1 cup chopped fresh strawberries

1 can full fat coconut milk

Butter

Maple syrup to taste

Fresh mint (optional)

Method

ā €ā €ā €ā €ā €ā €ā €ā €ā €

Leave the coconut milk overnight in the refrigerator. Remove the think layer of cream and whisk with a mixer until desired consistency.

Follow the directions on the pancake mix package and cook the pancakes with a bit of butter. Top with coconut cream, strawberries, fresh mint and maple syrup. Enjoy!
