Cabbage, onion & carrot salad with cumin seeds



This nutrient-dense salad is made with yummy @panierdufermier produce. Coleslaws have the potential of being nutritional powerhouses. Combinations are endless, will be sharing many more.


Makes 4 portions.

2 cups red cabbage (shredded)

1 cup yellow onion (shredded and soaked in ice water)

1 cup carrot (shredded)

1 tablespoon cumin seeds

1 tablespoon Manuka honey

1 tablespoon grated ginger

Extra-virgin olive oil (drizzle)

1 lemon (juiced)

Fresh mint (chopped thinly)

Ground pepper & salt (to taste)


Method

Strain the onion after soaking for 30 minutes. Mix all the ingredients together. Garnish with fresh mint and enjoy!
