Ingredients
12 beets, peeled and diced
Evoo
Salt and pepper to taste
Parchment paper
Aluminum foil
Toppings
Feta cheese, lemon juice, lemon zest and chopped chives.
Chopped walnuts, chopped mint and balsamic paste.
Method
Wrap the beets in 2 packets using parchment and tin foil.
Cook on and indirect source of heat for 30 minutes (400 F in the oven). Add the toppings when ready to serve. Enjoy!
