Locally grown beets from @panierdufermier are incorporated in this simple hummus recipe. You can add the toppings of your choice. Pictured here are roasted sesame seeds, a drizzle of evoo and fresh thyme.
Ingredients (10 servings)
1 medium sized beet (peeled and diced)
1 can (540 ml) chickpeas, rinsed and strained
2/3 cup tahini
2 lemons (juice)
1/4 cup water
Extra-virgin olive oil (optional, add until desired texture)
2 garlic cloves (chopped finely)
Ground pepper & salt (to taste)
Toppings
Sesame seeds (toasted, to taste)
Fresh thyme (chopped, to taste)
Extra-virgin olive oil (drizzle, to taste)
Method
Steam the beets for 15 minutes and let cool.
Add all the ingredients in a food processor except the toppings. Add evoo at the end to make it smooth.
Mix well. Serve with evoo, toasted sesame and fresh thyme and enjoy!
